Soy sauce

Soy sauce originated in China thousands of years ago. It is made from fermented soybeans, roasted grain, and special molds. This unique process gives it a delicious, salty, and savory umami flavor. People think it began about 2,200 years ago during the Han dynasty. Its earliest form might have been called qingjiang, recorded around AD 40. Later, during the Song dynasty, it was clearly known as soy sauce. It first helped stretch expensive salt, a vital ingredient back then. Soybeans eventually replaced fermented fish as the main base. Today, it is a key part of cooking in East and Southeast Asia. You can use it directly on food or mix it into many other dishes. It tastes great with rice, noodles, and sushi, often found in restaurants. Traditional soy sauce takes months to create using natural fermentation. This process breaks down ingredients into helpful amino acids and sugars. Quicker versions can be made using chemicals or a much shorter time.
